Instructions
  1. Saute the vegetables in the butter until slightly softened.
  2. Add the broth and water. Bring to a boil.
  3. Add the lentils, reduce heat and simmer 25 minutes, covered.
  4. Add the rice, and simmer 20 more minutes, covered. (see note)
Recipe Notes

Depending on what type of rice you use, you may need to increase the water or broth, and simmer times. Not to worry, follow these directions, and if your rice is not cooked, start by adding 1/2 C more of water or broth, and checking again in 15 minutes. Increasing the cook time will not alter the outcome of the recipe. Enjoy!
