Instructions
  1. Peel, chop and boil yams until nice and mushy. Drain.
  2. Put yams, ricotta, spices and minced garlic in a mixer and blend until smooth.
  3. While blending the mix for the filling, boil the manicotti until done.
  4. Drain, rinse with cold water and fill each shell, adding them to a 9 x 13 inch pan as you go.
  5. Drizzle with your sauce of choice (I used an homemade alfredo).
  6. Bake at 350 degrees for 35 or 40 minutes or until heated thoroughly.
  7. Garnish with minced chives and parmesan cheese. Salt and peeper to taste.
